mochi waffles

A bunch of my friends have been to this place in town called The Nook and tried their mochi waffles.  I've never had it, but wanted to figure out what was in it that made it mochi.  If you live in Hawaii and don't like mochi, especially the ice cream mochi from Bubbies , gtfo because that shit is delicious.  Checked out a couple recipes online and realized that you just replace the flour from waffles with mochiko.  Grabbed my favorite waffle recipe and replaced it with mochiko and this is what we came up with.  Paired with strawberries and topped with coconut syrup, i can't.


Mochi Waffles (makes about 4 waffles)

Ingredients

  • 1 1/2 cup of mochiko
  • 2 tablespoon of sugar
  • 1 1/2 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 egg
  • 1/4 teaspoon of vanilla extract
  • 3 tablespoons of melted butter
  • 3/4 - 1 cup of buttermilk

  • Mix dry ingredients and wet ingredients in separate bowls
  • Combine both into one bowl and mix until no lumps
  • Preheat waffle iron and grease
  • Pour waffle batter in until golden
  • Serve hot waffles with slices of strawberry and coconut syrup
